HiGh FiVE foR FRIDAY!!
  1. I made it thru the first week of school. After 24+ years…this is beginning to get easy.
  2. This weekend is DOVE season in Texas. In case you didn’t know and if you live in Texas and didn’t know, then you must not be a true TEXAN. Obviously my husband is a hunter (of many things) and will be gone. This weekend is a weekend of lots and lots of testosterone at the “lease” (which is far, far away) BUTTTT – it is also a weekend that I get all to myself. OH HELL TO THE YEAH!!!!!!! Do a pedicure, have some “girl” time at PETE’S DUELING PIANO BAR Saturday night, sleeping in, watch college football, church, catch up on my DVR’d TV programs………whatever I want!!!
  3. Speaking of doing things for myself. One of my “vices”, since I don’t smoke or drink (too often), is that I have artificial nails. When people ask me “Are those your nails?” I reply, “of course, I paid for them, didn’t I?”  Tonja, my dear sweet friend, has been doing my nails for many years. She always has the latest “fads” and wants me to be her guinea pig. This is what she talked me into this week. These are ROCKSTAR nails. Hmmmmmmmmm….not sure – guess they will grow on me!
4.This weekend starts college football, enough said.
    5. Got my stuff from NestPrettyThings in Etsy. They are too cute and I can't wait to wear them !

Happy Friday Ya’ll

Parmesan Zucchini

   Olive Oil
   1 large zucchini
   Sea Salt
Parmesan

Preheat your oven to 450 degrees.  Spray a cookie sheet with cooking spray.  Place some Olive oil in a bowl.  Slice the zucchini into thin round slices.  Dip the zucchini slices into the oil and coat thoroughly.  Place onto cookie sheet, sprinkle with sea salt and Parmesan.  Bake for 27 minutes.

These come out tasting almost like a potato chip.  I used coconut oil and cooked mine till they were "browner" and very crisp!
CROCK POT....

I love making main dishes in the crock pot. Especially on the weekends. I can start my dinner at breakfast and be ready to eat by 6pm ! This is one of my favorite and "bestest" dishes I make. Plus you get to smell those wonderful aromas allllll day long !

NO BEEF BROWN TIPS

2 lbs stew meat
12 ozs of 7-UP or Sprite
1 pkg. onion soup mix
1 small can mushrooms (drained)
1 can mushroom soup

Mix all ingredients and put in a crock pot. If you prefer to do in the oven, line a baking dish with aluminuim foil, and fold over the top to cover.

Cook on "low" for four hours or 275 in the oven

Serve over rice, Quinoa, or noodles. This stuff is to die for....and it couldn't be easier! Hubby loves this...
*Note: this is what is left of a double recipe !
